My Favorite Chicken Recipe
I once heard that “Love and cooking should be approached with the same reckless abandon”. Challenge accepted.
With all of this Wingfest talk, I thought I would share one of my favorite chicken recipes.
This recipe is so simple. It can be used as a marinade for wings, drummies and chicken breasts and it’s fantastic on all of them. This isn’t your typical marinade because marinade usually has an acid with it, so if you wanted to squirt in a little lemon or lime juice with it, that would be fine, but I think this tastes great without it.
Start with whatever part of the chicken you’re using. For this one, lets use the breasts. I am a huge fan of Just Bare Chicken Breasts. (They also make chicken tenders, too which are great to cut up for kebabs.)
Wash and dry the chicken and pound it evenly flat.
Next, put five tablespoons of honey, three tablespoons of soy sauce (I like Kikkoman reduced sodium), four cloves of minced garlic (I use Spice World), 1/2 a teaspoon of ground ginger, 1/2 teaspoon of black pepper and a pinch of salt in a bowl and mix well. Place the chicken in a Ziploc bag and pour the mixture over the top of the chicken. Make sure chicken is well covered. Seal the bag well and toss it in the fridge. I like to soak mine overnight. You can also mix this up quick in the morning and take it out whenever you’re ready to fix dinner in the evening.
These are amazing on the grill because the honey makes for a good caramelization on the chicken. I’ve also baked them in the oven in a lightly greased 13X9 pan at 400 for about 20 minutes.
I throw this together with a box of Rice a Roni Fried Rice and a salad. It’s super good.
