I finally got my copy of Nashville Kat's new cookbook, The Happy Husband Cookbook! I don't have a husband and neither does Wolf but the Iced Orange Chocolate Chip Cookies made us both happy. Very happy. Try them.

Iced Orange Chocolate Chip Cookies

This recipe is from my sister-in-law Susan and they’re one of the best cookies I’ve ever tasted. She and I like them best iced and really cold. My husband prefers these without the icing.

 

1 cup butter, softened

1 cup white sugar

3 ounces cream cheese, softened

2 eggs

2 teaspoons orange juice

Zest of 1 orange (zest the orange before you juice it)

2 ¼ cups flour

¼ teaspoon salt

12 ounces semisweet chocolate chips

Preheat oven to 350°. Grease cookie sheets lightly. Beat butter, sugar and cream cheese. Add eggs, juice and lemon zest. Add flour and salt then fold in the chocolate chips. Form dough into rounded teaspoonfuls and place on pan 2 inches apart. Bake 12-15 minutes or until lightly browned around edge. Add icing when they’re completely cool.

 

Icing:

2 cups powdered sugar

3 ounces cream cheese, softened

1 teaspoon orange juice

Zest of 1 orange

Mix powdered sugar, cream cheese, orange juice and orange zest until creamy.
